Summer Time is Grilling Time

It's summer and it's over 90 degrees almost everyday in Salt Lake City. Meaning it's too hot to cook in the house. Last night I fired up the grill to make some pork chops and looked over at some peaches I had picked up at the grocery store and had heard of people grilling fruit before and figured I would take a shot at it. We all know about grilled pineapple, but recently I had heard of people grilling watermelon, peaches, apples, and other stone fruits. So I figured I would give grilling fruit a try. It was so good it left my boyfriend asking for more!! I Instagramed it last night with a quick recipe the full recipe is below.

Ingredients (4 Servings)

2 Peaches halved (pits removed)

Balsamic Glaze (available in the grocery store or reduce your own)

Raw Sheep's Milk Cheese (or you can use blue cheese)

Wash and Cut Peaches. Heat Grill. Place peaches on hot grill face down for about 5 minutes. Take off heat and a light coat of glaze on them then return to heat for another 2-3 minutes. Take off of heat and add cheese crumbles.

You can serve this as a sweet and savory dessert or leave the cheese out and cut up the peach into a salad with some pecans and figs over a bed of arugula. However you decide to have them they are amazing!!
